Upside-Down Fettuccini Pie
|1/2 lb Italian Sausage||1/4 Cup Onion|
|1 Package (8 oz.) Fettuccini||1 Can (14.5 oz.) Diced Tomatoes|
|1 tsp Oregano||1/2 Cup Mozzarella Cheese, Shredded|
|1/2 Cup Parmesan Cheese||3 Eggs|
|2 Tbsp Butter, Melted||2 Tbsp Parsley Flakes|
|1/2 tsp Garlic, minced|
Brown sausage, add onion. Meanwhile cook fettuccini according to package directions. Add tomatoes and their liquid to sausage mixture. Add oregano and bring to a boil.
Reduce heat and simmer, covered for 20 minutes. Stir in mozzarella. Sprinkle 1/4 cup parmesan over tomato mixture. Mix eggs, 1/4 cup parmesan cheese, butter, parsley, and garlic together in a medium bowl.
Toss noodles with egg mixture. Spread noodle mixture into a freezer pie plate dish. Pour sausage mixture on top. Freeze.
To serve, thaw and bake, uncovered, at 350 for 25 minutes or until bubbly.
