1 Can Pinto Beans, rinse | 1/2 Cup Cheddar Cheese, shredded |
1 Cup Salsa | 1/2 Cup lettuce, shredded |
4 Corn Tortillas | 1 Cup Chicken, shredded |
1/2 Cup Frozen Corn |
Coat pie plate with cooking spray. Place beans in a small bowl, mash slightly. In a small saucepan or skillet cook and stir beans and chicken over medium heat for 2-3 minutes.
Spoon 1/4 cup salsa into bottom of prepared pie plate. Layer: 1 tortilla, half mashed bean mixture, 1tortilla, corn, 1/4 cup cheese, 1/4 cup salsa, 1 tortilla, remaining bean mixture, remainging tortilla, and remaining salsa.
Cover with foil; bake at 450 for 12 minutes. Remove foil. Sprinkle with 1/4 cup cheese bake 5 minutes longer. Top with shredded lettuce.
