5-6 potatoes
1 c. vegetable or chicken broth 1 Cup American cheese 1 tsp. onion powder |
½ c. sharp cheddar cheese, grated
salt & pepper to taste 2 TBSP diced scallions Quartered cherry tomatoes |
Boil salted water in large pot while peeling & dicing potatoes (dice them small for less cooking time). Add potatoes to boiling water; boil for 15-20 minutes, until soft & tender. Drain water from pot. Add 1/2c. broth, onion powder, American cheese, and salt & pepper. Using electric beater, mix potatoes together until light and fluffy, adding more broth if needed until you reach desired consistency. Fold in the sharp cheddar, scallions and tomatoes. Serve immediately.
