1 lb Ground Beef | 1 Can Tomatoes, undrained |
1/2 Cup Onion, chopped | 1 10oz Can Enchilada Sauce |
1/2 Bell Pepper, chopped | 9 Corn Tortillas |
1/2 Cup Frozen Corn | 2 Cups Cheddar cheese, shreddedd |
1 pkg Taco Seasoning | Sour Cream |
Heat oven to 350 degrees. Spray 9 inch glass pie plate with cooking spray. In 12 inch skillet, cook beef and onion over medium-high heat, stirring occasionally until cooked thoroughly; drain. Stir in bell pepper, corn, taco seasoning mix, tomatoes and enchilada sauce. Heat to boiling, remove heat.
Spread about 1/4 of beef mixture in thin layer in pie plate. Top with 3 tortillas, 1/4 beef mixture and 1/3 cheese. Repeat layers two more times. (ending with cheese on top). Bake about 30 minutes or until cheese is melted or lightly browned. Let stand for 5 minutes before serving.
