1 Onion, chopped

2-3 Carrots, diced

1 Quart ½ and ½

2-3 Stalks of Celery, diced

3-4 Cups Chicken Broth

4 Cups Chicken, cubed

1 16oz Jar Cheese Whiz

4 Stalks Broccoli

Cook onion, carrots, and celery in a small sauce pan with a little water until tender; set aside. Cook and cube 5 chicken breasts; set aside. Cut up 4 stalks of broccoli into bite size pieces; set aside. (It is best to have all the ingredients open and ready to use for the next portion of the recipe. It goes quick and you must constantly be stirring.)
In a large pot, melt 1 cube of butter over medium heat. Using a whisk, add 1/2 cup of flour. Continue to whisk and slowly add 1 quart of half & half, continue to stir and cook until thick. Avoid burning.
Slowly add 3-4 C. of chicken broth, continue to whisk and cook until slightly thickened. Add Cheese Whiz, continue to whisk and stir, scraping the bottom to keep from sticking, until all the Cheese Whiz is melted. Add previously cooked vegetables, chicken, broccoli and salt and pepper to taste. Cook over very low heat, stirring frequently until broccoli is tender.
