2 Tbs. Ketchup | Chicken, cut into thin strips |
1 Tbs. Honey | 3 Eggs beaten |
1 Tbs. Sambal | 1 c. Panko bread crumb |
1/2 c. Orange Juice | 1 c. Shredded Coconut |
In a saucepan combine ketchup, honey, sambal, and orange juice. Reduce on low for about 5 minutes then set aside. Heat deep pan on medium heat with oil filled about 1 inch.
Salt and pepper the chicken. Dredge the chicken in eggs, then in the bread crumbs and coconut mixture. Drop the chicken in the hot oil and fry until golden brown.
