(Serve with lettuce, avocado, tomatoes, chips and salsa)
1 lb Ground Beef | 1 Large Can Enchilada Sauce |
1 Sm Onion, chopped | 2-3 Cup Cheddar Cheese, shredded |
1 4oz can Green Chilies | 10 Flour Tortillas |
Preheat oven to 350.
Brown beef in a large skillet. Add onions and green chilies, cook until onions are tender. Spray a 9×13 baking dish with cooking spray. Pour aproximately 1/2 cup of enchilada sauce in the bottom of the pan, turn to coat. Layer 1/3 cup beef mixture and a few tablespoons of cheese on each tortilla. Roll tortilla tightly and place in a 9×13 baking dish. Repeat with remaining tortillas. Pour remaing enchilada sauce over enchiladas, covering well. Cover with foil and bake for 30 minutes. Remove foil, and sprinkle enchiladas with remaining cheese. Bake for an additional 15 minutes or until cheese melts.
