(Adapted from a “Moms with Crock pots” Recipe)
2 lbs Ground Beef, browned

1 (14oz) can Kidney Beans, rinsed

3 tsp Minced Garlic
|
1 (14oz) can Pinto Beans, rinsed
|
1 (14oz) can Tomato Sauce
|
¼ Cup Corn Meal
|
1 (10oz) can Diced Tomatoes w/ chilies
|
½ Cup warm Water
|
½ tsp Salt
|
1 bag Fritos
|
1 tsp Oregano
|
Cheddar Cheese, shredded
|
1 Tbsp Cumin
|
Diced onion
|
2 Tbsp Chili Powder
|
In a large crock pot combine cooked beef with garlic, tomato sauce, diced tomatoes, spices and beans. Cook on high for 3-4 hours. Mix corn meal and water, add to crock pot to thicken the chili. Cook an additional 15 minutes. Preheat oven to 350°. Cover the bottom of a 9×13 inch baking dish with a layer of Fritos. Top with chili, diced onion and cheese. Add additional Fritos around the outside edge of the pan. Bake for 15 minutes or until cheese is melted.
