No Bake Coconut Scotchies

2 Cups Sugar 2 1/2 Cups Quick Oats
2/3 Cup Milk 1 Cup Sweetened Coconut
3/4 Cup Butter 1/2 tsp Vanilla
1 (3.4oz) box Instant Butterscotch Pudding

In a medium saucepan cream together sugar, milk and butter. Bring to a boil, simmer for 2 minutes stirring constantly. Remove from heat and add pudding mix, oatmeal, coconut and vanilla. Drop onto waxed paper and allow to cool completely.

Variations: be creative with the pudding flavors! Try banana, pistachio, coconut, or vanilla.
