|2 Cups Sugar||2 1/2 Cups Quick Oats|
|2/3 Cup Milk||1 Cup Sweetened Coconut|
|3/4 Cup Butter||1/2 tsp Vanilla|
|1 (3.4oz) box Instant Butterscotch Pudding|
In a medium saucepan cream together sugar, milk and butter. Bring to a boil, simmer for 2 minutes stirring constantly. Remove from heat and add pudding mix, oatmeal, coconut and vanilla. Drop onto waxed paper and allow to cool completely.
Variations: be creative with the pudding flavors! Try banana, pistachio, coconut, or vanilla.
