1 Cup Orzo | 1 tsp Olive Oil | Juice From 1 Lemon |
1/2 tsp Salt | 8 Asparagus Spears | 1/3 Cup Feta Cheese |
2 tsp minced Garlic | 1 Cup Fresh Spinach | Salt and Pepper to Taste |
In a medium sauce pan bring 4 cups of water to a boil. Add 1/2 tsp salt and orzo. Cook about 10 minutes and drain, set aside.
Chop asparagus spears into 1inch pieces.
In a small sauce pan saute garlic in olive oil. Add asparagus and saute for 3-4 minutes. Add spinach and continue to cook until asparagus is tender and spinach shrinks down.
Place cooked orzo in a medium bowl, add vegetables and drizzle with lemon juice. Add salt and pepper to taste and sprinkle with feta cheese. Serve warm or cold.
