(Serve with Parmesan Orzo and fruit cocktail)
1/2 Cup Olive Oil | 3 Boneless Pork Chops |
1 Tbsp Lemon Juice | Topping: |
3 tsp Minced Garlic | Sliced Ham |
2 tsp grated lemon peel | Sliced Red Onions |
1/2 tsp each salt and pepper | Sliced Pepper Jack Cheese |
1/2 tsp each dried basil, parsley, rosemary | Salt and pepper |
In a large ziplock bag add all ingredients except toppings. Shake bag well to coat pork. Refrigerate for 2 hours or overnight. Drain and discard marinade. Broil pork chops for 5-6 minutes on each side until no longer pink. Place ham and onions on pork chops, cover with cheese. Broil for an additional 2 minutes or until cheese is melted.
