Potato and Omelet Muffins
8 Eggs Shredded Cheddar Cheese
36 Tater- Tots Vegetable of Choice (onion, peppers, leafy greens, tomato, zucchini)
Meat of Choice (Bacon, Sausage, Ham..)
1/4 C Milk

Preheat oven to 400 degrees and place tater tots in microwave to thaw for a couple of minutes. Grease muffin tins very well. Place 3 standard size tater tots in the bottom of each muffin hole. Take a small cup and squish them flat into the bottom of each tin.

Bake your tater tots for 10 minutes. Meanwhile, cook meat if not pre cooked and chop vegetables. After removing tots from the oven, lower the temperature to 350 degrees.

Sprinkle desired toppings into each tin. Whip together eggs and milk with a fork. Pour egg mixture into each tin, sprinkle with a little cheddar cheese and bake at 350 degrees for 20 minutes, or until egg is cooked through. Serve and Enjoy!
