Sprinkle chicken with salt and pepper. Let stand covered for 30 minutes. Spray cold grill with cooking spray, and place chicken on grill. Preheat to 350-400 degrees (medium high-heat). Grill chicken 5-10 minutes covered on each side, or until browned.
Reduce grill to 250-300 degrees (low heat); grill chicken for 20-30 minutes covered. Meanwhile, prepare spicy honey-limed barbecue sauce. Reserve 1 cup sauce. Brush the chicken with remaining sauce. Cover with grill lid, and grill for about 10 more minutes or until done. Garnish if desired.
Honey Lime Barbecue Sauce
1/4 Cup Butter | 1/4 Cup Honey |
1 Med Onion, diced | 2 Tbsp Lime Juice |
1 (12oz) Bottle Chili Sauce | 1/4 tsp Pepper |
1/3 Cup Water |
Saute onion in butter until tender. Add remaining ingredients and bring to a boil. Reduce heat to low and simmer for 5 minutes.
