Cut bell pepper in round slices large enough to hold the egg. In a medium to large skillet apply an even layer of oil or non-stick spray. Place the pepper rings in the skillet and then crack one egg into each ring. Sprinkle with salt and pepper for taste and place a lid over the skillet. Checking about every 2 minutes until thin layer has cooked over the tops of the eggs, or until cooked to your liking. Serve and Enjoy!
