Bottled Peaches

Bottled peaches are a staple at our house. They are a great compliment to any breakfast and the kids love them for an after school snack.

Peaches are an easy bottling project~

1- Wash and prep bottles

2- Bring a large sauce pot of water to a boil (for blanching)

3- Make syrup. I like to make a light syrup by combining 6 cups water with 1½ cups sugar (this will make enough syrup for about 6 quarts). Heat until sugar dissolves, keep syrup hot.

4- Blanch Peaches: Place whole peaches in boiling water for 30-60 seconds.

5- Remove and place in ice water to cool.

6- Peel, pit and slice peaches.
7- Place peach slices in a quart canning jar.

8- Fill jars with hot syrup. Run a spoon handle between the jar and the peaches to remove any air bubbles. Continue filling with syrup, leaving a ¼ inch head space.

9- Wash bottle rims thoroughly to remove all sugar.
10- Attach lids and rings
11- Place filled jars in a boiling water canner. Fill canner with water; be sure to cover the jars by at least 2 inches.  Bring water to a rolling boil. Boil for 25 minutes.

12- Remove jars from canner and place on a towel. Allow to sit undisturbed until completely cool (preferably for 24 hours).
13- Label and Store!
