|1 Can Black Beans||1 Tbsp Fresh Cilantro, minced|
|1 Green Onion, chopped||1 Tbsp lime Juice|
|2 Tbsp Red Onion, chopped||1 tsp Minced Garlic|
|2 Tbsp Roasted Sweet Red Pepper, chopped||Cheese and Tortillas|
In a small bowl mash beans with a fork; stir in green onion, red onion, cilantro, lime juice, and garlic. Spread 1/4 cup bean mixture over half of each tortilla; top with desired amount of cheese and fold over. Cook on a griddle over low heat for 1-2 minutes on each side or until cheese is melted. Serve with sour cream.
