Bottled Spaghetti Sauce
The project for today was home canned spaghetti sauce. I have done this for the past few years but haven’t been too thrilled with any of the recipes I have used. This time I used Suzanne McMinn’s recipe from Chickens in the Road. I made a few minor changes and I think this will now be my favorite recipe!
| 5 lbs Ground Beef | 3 Tbsp Vinegar | 1 Tbsp Each Crushed Red and Cayenne Pepper |
| 2 Cups Onion, chopped | 3 Tbsp Salt | 1 Tbsp Oregano |
| 2 Cups Peppers, Chopped | 2 Tbsp Brown Sugar | 2 tsp Pepper |
| 20-22 Cups Tomatoes, chopped | 2 Tbsp Parsley | 1 tsp Ginger |
| 4 6oz Cans Tomato Paste | 3 Tbsp Minced Garlic | 1 tsp Allspice |
Brown ground beef in a very large kettle. Add onions and peppers, cook until tender. Add remaining ingredients and simmer until thickened. Ladel into quart jars leaving 1 inch head space. Secure lids. Process in a pressure cooker at 13lbs for 1 hour and 15 minutes (1 hour for pints).
My sister-in-law helped me today. We started at 9 o’clock and were finished cleaning up the kitchen with the jars in the pressure cooker at 11. We ended up with 8 quarts and enough left over to make my family a pizza for dinner tonight. What is your favorite thing to do with garden fresh tomatoes?
