1 Tbsp Olive Oil | 1 tsp Dried Oregano |
2 tsp Minced Garlic | Flour tortillas |
1 1lb Pork Tenderloin, cut into 1inch cubes | 1/2 Cup Queso Fresco or Monterey Jack Cheese) |
1 8oz Can Tomato Sauce | Serve with: Sour Cream, shredded lettuce |
1 Tbsp Minced Chipotle Chilies | Diced tomatoes, and sliced avocado |
Cook garlic in heated oil for one minute. Add pork and cook until golden brown on all sides (about 5 minutes). Add tomato sauce, chipotles, and oregano, bring to a simmer and cook until pork reaches desired doneness. Serve over warm tortillas with toppings as desired.
