|1 Tbsp Olive Oil||1 tsp Dried Oregano|
|2 tsp Minced Garlic||Flour tortillas|
|1 1lb Pork Tenderloin, cut into 1inch cubes||1/2 Cup Queso Fresco or Monterey Jack Cheese)|
|1 8oz Can Tomato Sauce||Serve with: Sour Cream, shredded lettuce|
|1 Tbsp Minced Chipotle Chilies||Diced tomatoes, and sliced avocado|
Cook garlic in heated oil for one minute. Add pork and cook until golden brown on all sides (about 5 minutes). Add tomato sauce, chipotles, and oregano, bring to a simmer and cook until pork reaches desired doneness. Serve over warm tortillas with toppings as desired.
