Chipotle Pork Tacos

1 Tbsp Olive Oil 1 tsp Dried Oregano
2 tsp Minced Garlic Flour tortillas
1 1lb Pork Tenderloin, cut into 1inch cubes 1/2 Cup Queso Fresco or Monterey Jack Cheese)
1 8oz Can Tomato Sauce Serve with: Sour Cream, shredded lettuce
1 Tbsp Minced Chipotle Chilies Diced tomatoes, and sliced avocado

Cook garlic in heated oil for one minute. Add pork and cook until golden brown on all sides (about 5 minutes). Add tomato sauce, chipotles, and oregano, bring to a simmer and cook until pork reaches desired doneness. Serve over warm tortillas with toppings as desired.
