5 lbs Red Russet Potatoes | 1/2 lb Bacon, cut into 1 inch strips |
1 Large Yellow Onion, diced |
Wash potatoes and dice into bite size pieces. Boil potatoes in a large sauce pan for 15-20 minutes or until tender (smaller pieces will cook faster). Meanwhile, cook bacon in a large frying pan until ALMOST done. Drain potatoes. Add diced onions and potatoes to bacon and continue cooking until onions are tender.
