|1 Medium Zucchini, quartered lengthwise||2 Tbsp Basil Pesto|
|1 Small Yellow Summer Squash, quartered lengthwise||1 Tbsp Fresh Basil|
|1 Small Red Sweet Pepper, quartered lengthwise||1 Tbsp Fresh Oregano|
|2 Tbsp Olive Oil||4 Flour Tortillas|
|1 tsp each Salt and Pepper||1-2 C. Shredded Chicken (Optional)|
|1-2 Large Ripe Tomatoes||1 C. Mozzarella Cheese, shredded|
|1/4 C. Mayonnaise|
Lightly coat zucchini, squash, and red pepper with olive oil; sprinkle with salt and pepper. Grill vegetables until crisp-tender (allow 8-10 minutes for pepper and 5-6 minutes for squash and zucchini). Remove vegetables from the grill and chop. In a medium bowl combine chopped vegetables, tomatoes, mayonnaise, pesto, basil, and oregano (and chicken if using). Grill tortillas on each side for 1-2 minutes until lightly toasted. Spread vegetable mixture one one side of tortillas and top with shredded cheese. Cover and grill an additional 2 minutes or until cheese melts and vegetable mixture is warm.
