1 Medium Zucchini, quartered lengthwise | 2 Tbsp Basil Pesto |
1 Small Yellow Summer Squash, quartered lengthwise | 1 Tbsp Fresh Basil |
1 Small Red Sweet Pepper, quartered lengthwise | 1 Tbsp Fresh Oregano |
2 Tbsp Olive Oil | 4 Flour Tortillas |
1 tsp each Salt and Pepper | 1-2 C. Shredded Chicken (Optional) |
1-2 Large Ripe Tomatoes | 1 C. Mozzarella Cheese, shredded |
1/4 C. Mayonnaise |
Lightly coat zucchini, squash, and red pepper with olive oil; sprinkle with salt and pepper. Grill vegetables until crisp-tender (allow 8-10 minutes for pepper and 5-6 minutes for squash and zucchini). Remove vegetables from the grill and chop. In a medium bowl combine chopped vegetables, tomatoes, mayonnaise, pesto, basil, and oregano (and chicken if using). Grill tortillas on each side for 1-2 minutes until lightly toasted. Spread vegetable mixture one one side of tortillas and top with shredded cheese. Cover and grill an additional 2 minutes or until cheese melts and vegetable mixture is warm.
