|Left over Grilled Steak||1 c. sliced Sweet Peppers|
|4 slices Pepper Jack Cheese, cut in 3 strips/each||1 onion, cut in pieces|
|5 small soft Tortillas cut in half, warmed||Salt and Pepper, to taste|
|1/4 c. Canola Oil||Salsa/Sour Cream, if desired|
|1 large left over Baked Potato|
Cut steak in thin slices, the coat skillet with cooking spray and warm meat. Take a strip or two of pepper jack and roll in the soft tortilla. Return to the skillet to keep warm and to let cheese melt.
In heavy skillet heat on medium heat, add potatoes, peppers and onions. And fry for about 20 minutes or until peppers and onion are al dente.
