2 boneless, skinless chicken breasts
2 C. brown rice
1 can black beans
½ C. red onion, chopped
2 cloves garlic
½ C. olive oil
½ C. red/yellow peppers, chopped

1 carrot, chopped
1 C. broccoli
1 C. zucchini
1 fried egg (optional)

Heat ¼ C. oil, ¼ C. onion and garlic over med-high heat. Add chicken and pan sear. Cook rice with water or chicken broth according to package directions. Heat can of beans. Add chopped veggies to chicken and let them soften. Add beans, cover with rice. Mix over high heat. Serve over fried egg. Add salt and pepper to taste. *It needs more salt than you would think, so taste it to see.
