Adapted from a Jose Ole recipe
1 (20oz) Can Enchilada Sauce | 1/3 Cup Each: Green onions, Red onions, chopped/combined |
1 box Steak Taquitos | 1 (2.25oz) can Sliced Olives |
1 1/2 Cups 3 Cheese Mexican Blend, divided | Sour Cream (optional) |
1 (16oz) Can Refried beans |
Partially thaw taquitos. Preheat oven to 375. Pour 1/3 of the enchilada sauce into a lightly greased 9×13 baking dish. Arrange 1/2 of the taquitos over enchilada sauce. Evenly spread heated refried beans over taquitos. Layer 1/3 more sauce, 1/2 of the onion mixture and 1/2 of the shredded cheese. Top with remaining taquitos and enchilada sauce. Bake, covered for 25 minutes or until heated though. During the last 5 minutes of baking top with remaining cheese. Garnish with olives and sour cream.
*May be frozen. To serve, thaw and bake as directed.
