1 Zucchini | 2 Tbsp Extra Virgin Olive Oil |
1 Red Potato | Glarlic Salt and Pepper for taste |
Heat the olive oil over low heat in a medium pan. Dice the potato and add to the pan, and set heat to medium low with the lid over the pan, let cook for 10 minutes. Cut the zucchini into bite sized pieces and add into the pan with your seasoning. Mix together and let cook for another 7-10 minutes. Serve and enjoy!
