(Serve with corn on the cob & fresh fruit)
4+ boneless pork chops (the thicker the better)
Zest of 2 limes 3 TBSP brown sugar |
2 TBSP steak seasoning
2 tsp. cumin ½ tsp. allspice 3 TBSP extra virgin olive oil

Rinse & dry pork chops. Mix lime zest, sugar, seasonings and olive oil together in a shallow dish until you have a moist paste. Coat both sides of pork chops in the rub. Let chops marinade in rub anywhere from 15 min. to overnight. Grill on low heat until meat is firm and juices run clear (5-8 min. per side). Cook slow and low otherwise, the sugar rub will burn before the meat is cooked through.
