(Serve with Creamed Corn)
2 Tbsp Oil | 4 oz Can Green Chilies |
4 Flour Tortillas | 1 Can Refried Beans |
1/2 Lb Ground Beef | 1 Tomato, Diced |
1 Onion, Chopped | 1 Cup Shredded Lettuce |
1/4 tsp Garlic Powder | 1 Cup Shredded Cheese |
1/2 Cup Salsa | 1 Can Olives, sliced |
Heat oil in skillet. Fry tortillas one at a time for about 20 seconds on each side. Drain on paper towels. Cook ground beef until brown. Drain. Add onion, garlic powder, salsa, chilies, and beans. Simmer 20 minutes. To assemble, place 1 tortilla in pie plate. Spoon 1/4 bean mixture on tortilla. Sprinkle with 1/4 cup cheese. Repeat with remaining tortillas. Bake at 350 for 20 minutes or until heated. Top with lettuce, tomato and olives.
