|Sundried Tomato Vinaigrette Dressing||Provolone Cheese, sliced|
|Mushrooms, sliced||Baby Spinach Leaves|
|1 jar Roasted red Peppers, sliced||Baguette|
Mix red onion with 1/4 cup vinaigrette dressing; microwave on high until onions are crisp tender. Add mushrooms, peppers and mozzarella; lighly toss. Slice baguette, brush both sides with dressing. Cover bottom half of baguette with provolone, spinach and onion mixture.
Broil both halves 6 inches away from heat until cheese melts; place pieces together, slice and serve.
