|1 Cup Fresh Spinach, diced||4 Eggs|
|2 Tbsp Red Onions, diced||2 Tbsp Water|
|1/2 tsp Minced Garlic||1/4 Cup Feta Cheese|
|2 Tbsp Tomatoes, chopped|
Beat eggs and water until well blended. Cook spinach, onions and garlic in a small frying pan until onions are crisp tender. Add tomatoes. Pour egg mixture over onion mixture and cook until eggs begin to set. Gently lift the edges of the egg to allow uncooked portion to flow underneath. When eggs are almost cooked through sprinkle with 1/2 of the cheese and continue cooking.
Fold omelet in half and prinkle with remaining cheese. Remove from heat and allow to set for 2 minutes. Serve warm.
