Light Egg Salad Wraps

2 Green Onions 1/4 tsp Salt
2 Tbsp Sour Cream (low fat) 1/8 tsp Pepper
2 Tbsp Mayonnaise (low fat) 5 Hard Boiled Eggs
1/4 Cup Red Pepper, chopped Lettuce Leaves
1/4 Cup Carrots, chopped
  1. In a small bowl add the onion, sour cream, mayonnaise, red pepper, carrots, salt pepper.  Fold in coarsly chopped eggs. Spoon mixture onto 8 lettuce leaves.
